Mix sauce, chill.
Form 8 loose meat balls — don’t pack. Heat griddle until very hot. Butter buns and toast cut sides.
Smash each ball thin with spatula, season immediately. Sear ~60–75 sec until edges crisp, flip 30–45 sec (cheese on half the patties to melt).
Build: bottom bun → sauce → onion → lettuce → cheese-topped patty → pickles → middle bun → sauce → onion → lettuce → plain patty → pickles → top bun. Press lightly.
Not a Chef but... Just call him Chef, please!
Chill sauce an hour if you can; flavours marry.
