Ingredients:

For the Chicken

  • 2 boneless chicken breasts (pounded to even thickness)
  • 1 cup buttermilk
  • 2 tbsp hot sauce (for Popeyes vibe)
  • 1 cup flour
  • ½ cup cornstarch
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp cayenne (for spicy)
  • Salt + pepper
  • Oil for frying

Mise En Place:

Assembling

  • 2 brioche buns (buttered + toasted)
  • Pickle slices (non-negotiable for Chick-fil-A style)
  • Mayo or spicy mayo (mix mayo + hot sauce)
  • Optional: lettuce, tomato, cheese (if you want deluxe version)

Cooking Steps:

Marinate chicken in buttermilk + hot sauce 1 hour.

Mix flour + cornstarch + spices. Dredge chicken, pressing mix into it for extra craggy crunch.

Fry at 175°C / 350°F, ~5–6 min per side, until golden + internal temp 74°C / 165°F.

Assemble: bun → mayo → pickles → chicken → bun lid.
