Marinate chicken in buttermilk + hot sauce 1 hour.
Mix flour + cornstarch + spices. Dredge chicken, pressing mix into it for extra craggy crunch.
Fry at 175°C / 350°F, ~5–6 min per side, until golden + internal temp 74°C / 165°F.
Assemble: bun → mayo → pickles → chicken → bun lid.
Not a Chef but... Just call him Chef, please!
For Popeyes style, go heavier on cayenne + hot sauce. For Chick-fil-A, keep seasoning milder + brush buns with melted butter.
