Chipotle-Style Chicken Burrito Bowl

Ingredients:

For the Chicken

  • 4 boneless chicken thighs (juicier than breasts)
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 chipotle peppers in adobo (minced)
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • Juice of 1 lime
  • Salt + pepper

Base

  • 2 cups cooked white rice (or cilantro-lime rice)
  • 1 can black beans (drained, rinsed)
  • 1 cup corn (grilled or frozen, warmed)

Toppings (load it up)

  • Pico de gallo (tomato, onion, cilantro, lime)
  • Guacamole
  • Shredded cheese (cheddar, Jack)
  • Sour cream
  • Shredded lettuce
  • Extra salsa + hot sauce

Cooking Steps:

Marinate chicken 30 min (oil, garlic, chipotle, spices, lime).

Grill or pan-sear chicken until charred and juicy (7–8 min each side). Slice.

Build bowls: rice → beans → chicken → toppings avalanche.
